Ingredients Serving: 10

  1. 1 1/4 cup all purpose flour
  2. 1/4 cup + 2tbsp sugar
  3. 1tesp baking powder
  4. 1/4 tesp baking soda
  5. Pinch salt
  6. 1 egg
  7. 1/2 cup Buttermilk
  8. 2 tbsp Milk
  9. 1/4 cup melted butter
  10. 1/2 tesp vanilla essence
  11. 1/2 cup dried blueberry,1 tbsp flour to dust the berry

Instructions

  1. Preheat oven 180℃ for 15 minutes.
  2. In a bowl whisk egg and sugar till fluffy.
  3. Add buttermilk ,melted butter, milk and whisk for 2 minutes.
  4. Seive all purpose flour, bkpd, bkso,salt and add it to the egg mixture.Stir to combine well.
  5. Dust blueberry with flour and fold into the batter.
  6. Fill muffin cups with batter, only half of each cup.
  7. Bake at 170℃ for 20 minutes,or skewer inserted into the muffin comes out clean.
  8. Remove cool on wire rack. Enjoy the soft muffins.
