Vada pav also known as the Indian burger is the lifeline of Mumbaikars.While my husband was working for BARC,during our initial days of marriage when my cooking was nothing more than burning food this was the one thing we relied on.Vada pav brings back so many memories down the lane.The pav bread stuffed with spicy potato vada with the addition of green and garlic flavorful chutneys mark its own significant place in Indian Cuisine. Ingredients Serving: 8

  1. For Batata Vada : 2 tbsp : Oil
  2. 1/2 tsp : mustard seeds
  3. 1 tbsp : Garlic minced
  4. 1 tsp : Ginger minced
  5. 2 no : Green chillies minced
  6. 1/2 tsp : Turmeric powder
  7. 2 cups : Gram flour
  8. 6 medium : Potato (boiled,mashed)
  9. 2 tbsp : Rice flour
  10. Salt to taste
  11. Oil for Deep frying
  12. For Dry Garlic chutney : 1/2 tsp : Oil
  13. 6 to 8 : Garlic cloves
  14. 3 tbsp : Desicated coconut
  15. 3 tbsp : Peanuts
  16. 2 tbsp : Sesame seeds
  17. 1 tsp : Cumin seeds
  18. 1 tbsp : coriander seeds
  19. 2 tsp : red chilli powder
  20. Salt to taste
  21. For Green chutney : 1 cup : Coriander leaves
  22. 1/2 cup : Mint leaves
  23. 3 no : Green chillies
  24. 1/4 tsp : Black salt
  25. 1/2 tsp : Sugar
  26. 2 tsp : Lemon juice
  27. Salt to taste

Instructions

  1. Let's begin by preparing chutneys. For Green chutney : Add the fresh coriander, fresh mint and green chillies to a blender and grind them to a smooth paste adding little water if required.
  2. Add the black salt and sugar. Transfer the chutney to a bowl, add the lemon juice and mix well.
  3. For the Dry Garlic Chutney: To a pan, add in the oil and garlic. Cook the garlic until golden specks appear.
  4. Remove the roasted garlic into a bowl.. To the same pan, add the peanuts and roast until halfway done.To the peanuts, add the coconut, sesame, cumin, coriander and roast in low flame until everything turns golden.
  5. Turn off and transfer them to a bowl. Mix Red Chili and Salt, let it cool completely. Now grind to a coarse powder and dry garlic chutney is ready to use.
  6. For Batata vada :Heat a pan, add in the oil. Once hot add in mustard seeds and allow them to splutter.
  7. Next stir in garlic, green chili, ginger and turmeric. and cook them for a minute. Later add in the boiled, mashed potatoes, salt and mix them well. Cook for a minute or two. Transfer to a bowl and let cool completely.
  8. Divide the potato mixture into 8 round portions. Flatten them a bit to resemble vadas.
  9. In a bowl, add in the gram flour, rice flour, salt and make a thick and flowy batter using water as required. Let batter rest for 15 mins.
  10. Dip the vadas in batter and deep fry in medium hot oil until golden and then take down into kitchen tissue.
  11. For assembling Vada Pav: Take a Pav, cut it in the middle halfway through, smear the green chutney on the insides of the pav. Sprinkle dry garlic chutney generously, then place in the Batata vadas. Serve and Gorge !
