ABOUT Besan or Gram flour curry RECIPE

This dish is from Orissa, as the name goes, is prepared with besan or gram flour. In this dish, the besan is kneaded and cooked in a curry.

Ingredients Serving: 3

  1. For the dough:
  2. 1 cup besan or gram flour
  3. Salt to taste
  4. 2 tsp ginger-garlic paste
  5. 1 chopped green chilli
  6. Enough water to knead into a soft dough
  7. Enough oil to fry
  8. 2 tsp sesame seeds
  9. For the curry:
  10. 2 tbsp oil
  11. 1 tsp cumin seeds
  12. 3 tsp ginger-garlic paste
  13. 3 tbsp onion paste
  14. 2 tsp red chilli powder
  15. 1 tsp haldi powder
  16. 1 tbsp coriander powder
  17. 1 tsp garam masala
  18. 1 bay leaf
  19. 2-3 cloves
  20. 2-3 green cardamoms
  21. 2 cups Water

Instructions

  1. Mix everything mentioned under the ingredients "for dough". Add water and knead into a soft dough.
  2. Once the kneading is done, make little balls (not perfect round shapes) and put them into boling water. Let them boil for 3-4 mins.
  3. Take the balls out of the water and sprinkle some sesame seeds on it.
  4. Fry these balls till they are golden brown and keep aside.
  5. Heat 2 tbsp oil in a wok. Add ginger-garlic and the onion paste, saute it till the raw smell goes away. Now add all the whole garam masala and cumin seeds to it.
  6. Next, add all the dry spices, salt to it and saute till the oil starts to separate itself. Add water and put the fried balls into it, let it simmer for 10 mins.
  7. Transfer it in a bowl and serve hot.
