Ingredients Serving: 5

  1. Hard-boiled eggs - 5
  2. Big onions - 2
  3. Fennel seeds - 1/2 teaspoon
  4. Ginger garlic paste - 3 teaspoon
  5. Tomato medium sized - 2
  6. Red chili powder - 1 1/2 teaspoon
  7. Turmeric powder - 1/2 teaspoon
  8. Coriander powder - 2 teaspoon
  9. Garam masala - 1 teaspoon
  10. Water as per need
  11. Coconut milk - 1/2 cup
  12. Curry leaves few
  13. Salt as per taste
  14. Coconut Oil as per need

Instructions

  1. Heat oil in a pan add fennel seeds, curry leaves and chopped onions saute till it becomes soft.
  2. Then add the chopped tomatoes and saute till it beomes soft.
  3. Add ginger garlic paste and saute for 2- 3 minutes.
  4. Then add the masala and required salt one by one and saute well until the oil separates from the pan.
  5. Add enough water and let it boils.
  6. Cut the boiled eggs into 2 or add it as it is gently into the gravy.
  7. Cover the pan and allow it to cook for 3 to 4 minutes.
  8. Now add the coconut milk and cook for another 4 to 5 minutes in low flame.
  9. Delicious spicy egg curry is ready to serve with appam or chappathis.
