ABOUT Eggless and Butterless Cocoa Walnut Brownies RECIPE

Brownies are the favorites of all age groups, the added crunch of walnuts and choco chips just takes it to another level. A perfect accompaniment for tea/ coffee/ milk, it tastes even better with a dollop of ice cream or whipped cream. I even love them with a drizzle of caramel as well.

Ingredients Serving: 10

  1. 1 cup + additional 1 tbsp All purpose flour/Maida
  2. 3/4 cup icing sugar
  3. 1/2 cup cocoa powder
  4. A pinch of salt
  5. 1 tsp baking soda
  6. 5 tbsp/ 59 ml / 1/3 cup vegetable or sunflower oil
  7. 1 cup buttermilk
  8. 1 tsp vanilla extract
  9. 2 tsp Instant coffee ( Melt the coffee powder in a tbsp of hot water and set aside to cool )
  10. 1/4 cup chopped walnuts (optional )
  11. 1/4 cup chocolate chips (optional )

Instructions

  1. Firstly sift the all purpose flour, cocoa powder, baking soda and icing sugar. Next add the salt and stir.
  2. In a separate bowl, add the oil, buttermilk, coffee decoction and vanilla essence. Whisk this properly until it is mixed well.
  3. Now fold in the dry sifted ingredients into this wet mixture with a whisk or spatula.
  4. In a small bowl add the chopped walnuts, chocolate chips and add a tbsp of all purpose flour to mix properly. This step ensures that the nuts and chips are distributed well or else they tend to sink at the bottom.
  5. Now fold these into the wet mixture, be gentle while mixing. Next grease and line a 8×13" inch pan with parchment paper.
  6. Now pour in the brownie mixture into the lined pan, level it with the back of the spatula so that mix is evenly spread in the pan.
  7. Bake this in a preheated oven at 180° C / 350°F for about 20 to 25 mins or until a toothpick inserted in the center comes out clean.
  8. Cool this at room temperature and cut into bite size pieces. Enjoy with a cuppa or ice cream.
