ABOUT Dahi Vada Chaat RECIPE

Dahi vada chaat is definetly common in most of the indian kitchens. But my dish is special as I learnt it from my mumma :yum:. This dish goes as accompaniment but in Summers we used to have it as main course at my muma's place! Blending of green chutney and Dates chutney with dahi makes it super tasty anytime. So here we go with the Recipie......

Ingredients Serving: 4

  1. For making vadas :-
  2. White Urad daal 1 cup
  3. Yellow mung daal 1/2 cup
  4. Salt to taste
  5. Water to soak daal
  6. 1 Tablespoon ginger , green chilly and green coriander leaves paste.
  7. Oil to deep fry vadas
  8. For making Green chutney:-
  9. 1/2 cup chopped green coriander leaves
  10. 15-20 mint leaves
  11. 1 tsp lemon juice
  12. Salt to taste.
  13. Little Water to blend it .
  14. For Making Dates and Tamarind Chutney :-
  15. 8-10 black seedless dates
  16. Tamarind 30 gms
  17. Jaggery 1 Tablespoon
  18. Salt to taste.
  19. For preparing final Dish:-
  20. Roasted cumin powder
  21. Red chilly powder
  22. Curd 4 cups

Instructions

  1. To make vadas:-
  2. Soak both the daals in Luke warm water for 2 hours .
  3. Grind the soaked daal along with 1 tablespoon ginger,green chilly and green coriander leaves paste.
  4. Cover it and Keep it aside the prepared mixture for 4 hours . (This process helps to yield soft vadas)
  5. After 4 hours, heat oil in a pan to fry vadas.
  6. Now put loopful of mixture into heated oil and fry it till it gives light yellow colour .
  7. After frying keep ready Luke warm water to soak this vadas for few minutes.
  8. After soaking in luke warm water , squeeze excess of oil and water from vadas and put them in butter milk for few minutes.
  9. Again squeeze excess of butter milk and keep aside prepared soft vadas in a dish.
  10. For making Green Chutney:-
  11. Put chopped green coriander leaves, mint leaves, lemon juice and salt in a mixture jar and mix it adding required water to thick consistency.
  12. For Making Dates and Tamarind Chutney:-
  13. Wash Tamarind and dates in water.
  14. Soak Tamarind and seedless dates in water for 15 minutes .
  15. Now let it cook for 5 minutes on low flame .
  16. Add jaggery , and salt into it.
  17. Switch off the flame and let it cool .
  18. Now strain the mixture into a bowl and throw away the residues .
  19. For preparing final Dahi Vada Chaat :-
  20. Put 2 butter milk soaked and squeezed vadas in a bowl.
  21. Add 3 table spoon blended curd upon it.
  22. Sprinkle salt,red chilly powder, roasted cumin powder upon it.
  23. Put little green chutney upon it.
  24. Now add Dates and Tamarind Chutney on it.
  25. Your Dahi Vada Chaat is ready to serve now.
