ABOUT Malabar pathiri - glutenfree RECIPE

This is a flat gluten free bread typically prepared in north kerala and coastal malabar region.

Ingredients Serving: 5

  1. Roasted rice flour 2 cups
  2. Water 2 cups
  3. Salt to taste
  4. Oil 1 tbsp

Instructions

  1. Take a big vessel preferably steel or non stick.
  2. Boil water with salt and 1 TSP oil
  3. When the water starts rolling well.. add the rice flour and mix it.
  4. Make sure it is in low flame..just roughly mix it and switch off the flame .
  5. Cover the vessel with a lid and keep is aside for 10 mins.
  6. Apply some oil in your hands and started kneading it well. Do it in one go.
  7. Knead it well until the dough becomes smooth n soft.
  8. Roll out small portions of the dough into lime sized ball and flatten it between the palms.
  9. Using a roller flatten each balls into thin pathiris.
  10. Heat a non-stick tawa and when it becomes hot, in lower to medium flame and place each pathiri on it. Flip over after 10-15 seconds and press on the center with back of a flat spoon and wait till it puffs up. Wait for another 30 seconds
  11. Don't wait for pathiri to burn..
  12. You can drop it in coconut milk if you would like.
