ABOUT Egg pathiri. RECIPE

A malabar breakfast dish with rice , maida, coconut milk & egg. This spongy delicious pathiri is usually taken with sweet coconut milk.

Ingredients Serving: 4

  1. Raw rice 1 cup
  2. Maida 1 cup
  3. Egg 1
  4. coconut milk 1 cup ( thick.)
  5. Baking powder 1/4tsp
  6. Salt
  7. To have with pathiri
  8. Coconut milk 2 cups
  9. Sugar 3 tbsp
  10. Chopped onion 1 tbsp
  11. Oil 1 tsp

Instructions

  1. soak rice overnight.
  2. blend rice maida coconut milk & egg to a smooth batter.
  3. if the batter is thick add 2nd coconut milk & make the batter usual dosa consistency.
  4. add salt & keep for 5 min.
  5. at the time of making add baking powder.
  6. this is usually made in clay pot. but we can use non stick pan too.
  7. brush some oil on the pan if using non stick .
  8. pour 1 or 11/2 big laddle of batter on a very hot pan. then only holes come on top of pathiri. dont spread it. when bubbles come, reduce flame . cover & cook for some more sec.
  9. cook only one side. don't turn it.
  10. always remember to make pan very hot before pouring the batter.
  11. serve hot with coconut milk.
  12. For the milk
  13. fry onion in oil . add thick coconut milk with sugar . stir for some time & remove from fire.
