My Nani had diabeted so my Mom was preparing Quinoa ( was popular as" Kodri ") Upama for her. I used to share from her. So recollecting that taste I am presenting this recepie.

Ingredients Serving: 2

  1. Quinoa 1/2 bowl.
  2. Water 1 1/2 bowl.
  3. Onion 1 big.
  4. Broccoli florets 1/2 cup.
  5. Spinach chopped big 1 cup.
  6. Garlic crushed 4 to 5 no.( 1 tsp)
  7. Ginger grated 1 tsp
  8. Bay leaves 2 to 3
  9. Cardemom pieces few
  10. Ghee 1 tbsp
  11. Olive oil 2 tbsp
  12. Salt to taste
  13. Chilli powder / green chilli to taste.
  14. Garam masala 1/2 tsp.
  15. Cheese 2 slices
  16. Roasted coarse grind ground nuts. 3 tbsp.
  17. Coriander leavrschopped 2 tbsp.

Instructions

  1. Wash and rinse quinoa under running water 2 tp 3 times. Strain and keep aside.
  2. Heat ghee in a pan. Add cardamom and bay leaves.
  3. Add quinoa , saute for 5 to 8 minutes till nice aroma comes.
  4. Add hot water and salt . Cover and let cook medium heat.
  5. Once cooked take out in a bowl .
  6. In another pan heat oil. Add Onions, saute for a minute.
  7. Add Broccoli , saute. Add salt and cook uncovered 2 minutes.
  8. Add pepper , ginger, garlic,, . Saute a little.
  9. Add chilli powder and garam masala. Fry a lot.
  10. Add Spinach. Saute on high heat.
  11. Now add cooked quinoa. Mix well. Add coriander.
  12. Now tear Cheese slices in small pieces with hand and add.
  13. Cover and cook on sim ( low temp. ) for 5 minutes.
  14. Cover for 3 to 4 minutes.your quinoa is ready to serve
  15. Serve with garnish of Groundnut powder.
