ABOUT Super food quinoa with Stir fried Broccoli and Spinach. RECIPE
My Nani had diabeted so my Mom was preparing Quinoa ( was popular as" Kodri ") Upama for her. I used to share from her. So recollecting that taste I am presenting this recepie.

Ingredients Serving: 2
Quinoa 1/2 bowl.
Water 1 1/2 bowl.
Onion 1 big.
Broccoli florets 1/2 cup.
Spinach chopped big 1 cup.
Garlic crushed 4 to 5 no.( 1 tsp)
Ginger grated 1 tsp
Bay leaves 2 to 3
Cardemom pieces few
Ghee 1 tbsp
Olive oil 2 tbsp
Salt to taste
Chilli powder / green chilli to taste.
Garam masala 1/2 tsp.
Cheese 2 slices
Roasted coarse grind ground nuts. 3 tbsp.
Coriander leavrschopped 2 tbsp.
Instructions
Wash and rinse quinoa under running water 2 tp 3 times. Strain and keep aside.
Heat ghee in a pan. Add cardamom and bay leaves.
Add quinoa , saute for 5 to 8 minutes till nice aroma comes.
Add hot water and salt . Cover and let cook medium heat.
Once cooked take out in a bowl .
In another pan heat oil. Add Onions, saute for a minute.
Add Broccoli , saute. Add salt and cook uncovered 2 minutes.
Add pepper , ginger, garlic,, . Saute a little.
Add chilli powder and garam masala. Fry a lot.
Add Spinach. Saute on high heat.
Now add cooked quinoa. Mix well. Add coriander.
Now tear Cheese slices in small pieces with hand and add.
Cover and cook on sim ( low temp. ) for 5 minutes.
Cover for 3 to 4 minutes.your quinoa is ready to serve
Serve with garnish of Groundnut powder.
