Apply some oil on big brinjal and prick it with knife on 4-5 places
Dry roast on flame till soft .. keep changing and turning the Brinjal for next 5 minutes .
Let it cool for some time and peel off burnt black brinjal peels
Mash the cooked brinjal pulp
Heat oil in a pan, splutter mustard seeds and add finely chopped onion
Saute' onion till golden brown and add chopped spring onion ,crushed garlic , grated ginger , turmeric powder and red chilly powder
Mix well and saute' till cooked
Add chopped tomato and saute' till soft
Now add mashed brinjal pulp and salt to taste . Add half cup of water ..mix well and cook covered for next 5 minutes
Garnish with chopped coriander and serve hot immediately with soft phulkas
