Ingredients Serving: 2

  1. Big brinjal 1
  2. Spring onion washed and chopped 2 cups
  3. Finely chopped onion 1 tablespoon
  4. Finely chopped tomato 2 cups
  5. Crushed garlic 2 teaspoon
  6. Chopped green chillies 2
  7. Grated ginger 1 teaspoon
  8. Oil 1 tablespoon
  9. Mustard seeds 1 teaspoon
  10. Turmeric powder 1/2 teaspoon
  11. Red chilly powder 1 teaspoon
  12. Salt to taste

Instructions

  1. Apply some oil on big brinjal and prick it with knife on 4-5 places
  2. Dry roast on flame till soft .. keep changing and turning the Brinjal for next 5 minutes .
  3. Let it cool for some time and peel off burnt black brinjal peels
  4. Mash the cooked brinjal pulp
  5. Heat oil in a pan, splutter mustard seeds and add finely chopped onion
  6. Saute' onion till golden brown and add chopped spring onion ,crushed garlic , grated ginger , turmeric powder and red chilly powder
  7. Mix well and saute' till cooked
  8. Add chopped tomato and saute' till soft
  9. Now add mashed brinjal pulp and salt to taste . Add half cup of water ..mix well and cook covered for next 5 minutes
  10. Garnish with chopped coriander and serve hot immediately with soft phulkas
