ABOUT Chicken Seekh Kabab from coriander pesto RECIPE

Delicious and juicy, seekh kebabs are usually prepared with minced lamb meat. My take on this traditional North Indian delicacy is using minced chicken and freshly prepared coriander pesto.

Ingredients Serving: 4

  1. 2 chicken breasts finely minced (approximately 500 gms)
  2. 4 garlic cloves finely chopped
  3. 1 inch ginger finely chopped
  4. 1/3 cup onions finely chopped
  5. 1/3 cup coriander pesto, made by grinding coriander stems (of 1 bunch) with 4 green chillies, 2 tbsp olive oil and 1 tbsp lemon juice Do not use any water in pesto. (You can also use coriander leaves to make the pesto.)
  6. 4 tbsp cashews blanched and grounded to a fine paste
  7. 1 tsp garam masala
  8. 1 tsp white pepper powder
  9. 1 tbsp kashmiri mirch powder
  10. 1 tsp chat masala
  11. Black salt or normal salt as per taste
  12. 8 bamboo sticks(satay sticks) soaked in water for atleast 30 minutes
  13. Oil for shallow frying

Instructions

  1. Mix together all the ingredients except the oil in a bowl.
  2. Heat a tawa or a non-stick pan and drizzle some oil on it. Wet your hands, take a little chicken mixture and spread it around a satay stick. Press firmly and place the seekh kababs on the tawa.
  3. Cook it, turning from time to time, so that they cook evenly all around. Baste with butter or oil at regular intervals.
  4. Serve it hot with green mint chutney.
