Vangi bath is the most popular dish of Karnataka. Combined with cooked rice, the fresh taste of roasted brinjals in aromatic spices can be savoured as a one pot meal without any sides to accompany it.

Oil 4 tbsp
Chana daal 1 tsp
Urad daal 1 tsp
Mustard seeds 1/4 tsp
Onion 1
Bay leaves 2
Green peas 1/4 cup
Brinjal 10
Haldi 1/4 tsp
Tamrind small ball soaked in 1 cup water
Salt
Tomato 1
Curry leaves 15
Jaggery 1/2 tsp
Vangi bath powder ingredients:
Cardamom 1
Cinnamon 3 (1/2 inch each)
Clove 5-6
Chana daal 3 tsp
Urad daal 2 tsp
Dhaniya seeds 4 tsp
Kashmir red chili 5-6
Dry coconut 1/4 cup
Oil 1tsp
Instructions
Fry vangi bath powder ingredients on low flame.
Cut brinjals into cubical shape.
Heat oil in a pan and put mustard seeds, urad dal, chana daal, onion, bay leaves and curry leaves.
Put brinjals, peas, haldi, fry for some time and simmer for 5 minutes.
Make sure brinjals are boiled 90%. Now add tamarind extract, salt, jaggery and tomato, cook for sometime till no water is left in the pan.
Put Vangi bath powder and simmer it for 2 minutes. Now vangi bath masala(gojju) is ready.
Mix this masala to cooked rice and serve hot.
