ABOUT Mother's Delight - Gobhi Chilli RECIPE

This is a recipe from my childhood, I remember how fussy I used to be about eating vegetables and my mum would try new recipes just to soothe my palate. The original recipe calls for deep-frying the cauliflower but as we all are health conscious these days I have stir fried it. Hope you guys will like it.

Ingredients Serving: 2

  1. Cauliflower - 1 medium size
  2. Onion - 1 Big
  3. Tomato - 2-3 no.s medium size
  4. Green Chillies - 2-3 no.s
  5. Whole Spices - 1 inch Cinnamon stick, 2-3 Cardamom, 3-4 Cloves
  6. Turmeric Powder - 1/2 teaspoon
  7. Red Chilli Powder - 1 tablespoon (adjust according to your taste)
  8. Coriander Powder - 1 tablespoon
  9. Corn Flour - 2-3 tablespoon for coating
  10. Sugar - A pinch
  11. Salt - to taste
  12. Oil - 3-4 tablespoon
  13. Coriander leaves for garnishing

Instructions

  1. Wash and cut cauliflower into small florets and coat them with corn flour.
  2. In a non-stick pan heat 2 tablespoon of oil and add cauliflower. Stir fry on medium flame till it turns light brown. Remove and keep aside.
  3. Meanwhile finely chop onion, tomato and green chillies.
  4. Now in the same pan add remaining oil and add the whole spices. Once it starts to crackle add a pinch of sugar along with onion and green chillies.
  5. Saute it for a minute or two and add the tomatoes. Sprinkle little water and cover n cook till it turns mushy.
  6. Time to add the remaining dry spices and cook for another 2-3 minutes or till oil starts separating.
  7. Finally add the fried cauliflower, mix well and again cover and cook for another 12-15 minutes.
  8. Gobhi Chilli is ready. Garnish with coriander leaves and serve as a side dish.
