  1. 1 cup Maida or all purpose flour
  2. Water as required
  3. salt as per taste
  4. 1 tsp ajwain seeds
  5. Half cup coriander leaves finely chopped
  6. 1/4 cup fresh peas
  7. Oil for frying

Instructions

  1. First take maida and add about 1 and half cup water into it. Mix well. Batter consistency should be very runny. Keep this aside for fermentation about 1 hour.
  2. Meanwhile grind peas coarsely in a grinder.
  3. After 1 hour take maida batter, add corainder leaves, ajwain seeds, salt as per taste and grinded peas into it. Mix all ingredients well.
  4. Now take a kadai or pan, add oil when oil is getting hot, pour this batter with hands, continue pouring to make a round net shape.
  5. Fry only one side and you can see the round shape will form. Gheur is ready. Take out this gheur with knitting needle. This is an interesting step. In this recipe we use knitting needle for frying instead of spatula.
  6. Serve this gheur with curd or tari wali Allo ki sabji. Enjoy traditional dish of dogris.
