ABOUT Matka Kulfi RECIPE

Kulfi is a popular frozen diary dessert of India and some other countries like Pakistan, Bangladesh.Matka Kulfi is popular in Rajasthan. It is traditionally prepared by evaporating sweetened and flavoured milk via slow cooking ,with continues stirring to keep milk from sticking to the bottom of the vessel until it's volume is reduced to one third. Then the semi - condensed milk is frozen in a matka or an earthen pot.

Ingredients Serving: 4

  1. Milk - 1 litre
  2. Sugar - 1/2 cup
  3. Almonds (soaked and peeled) - 10
  4. Pistachios (soaked and peeled) - 10
  5. Cashew nuts (soaked) - 6
  6. Soaked saffron in 1 tablespoon warm milk - 1 pinch
  7. Cardamom powder - 1/2 teaspoon
  8. Ghee or clarified butter - 1/2 teaspoon

Instructions

  1. Chop all dry fruits.
  2. Heat ghee in a pan, add all chopped dry fruits and fry until light brown.
  3. Heat milk in a pan, bring it to a boil, when milk will start boiling reduce the heat.
  4. Add dry fruits into the milk and keep the heat on low.
  5. Stir continuously to keep the milk from sticking to the bottom of the vessel until its volume is reduced to one third.
  6. Add sugar and stir till it dissolves and add saffron to the reduced milk.
  7. Add green cardamom powder and mix.
  8. Pour the above mixture into four small matkas or earthen pots.
  9. Cover with any clean cloth or foil. Freeze it for four hours and then enjoy.
