ABOUT Bhuna Kukda (A taste of Rajasthan) RECIPE

A Rajasthani delicacy: Chicken cooked in Rajasthani style with loads of spices and its own juice.

Ingredients Serving: 3

  1. Chicken (Curry pieces) 1/2 kg
  2. Mustard Oil 1 tbsp
  3. Cumin seeds 1 tsp
  4. 1 Stick Cinnamon
  5. 2 Bay Leaves
  6. 8 cloves
  7. 10 Garlic cloves
  8. 5 Dry Red Chillies soaked in water
  9. Turmeric powder 1 tsp
  10. Coriander powder 1 tsp
  11. Sugar powder 1 tsp
  12. Vinegar 1 tsp
  13. Yogurt 2 tbsp
  14. Salt to taste

Instructions

  1. Chicken Marination : Clean and wash the chicken pieces. Add 1 tsp turmeric and 1/2 tsp salt and keep it aside for at least 30 minutes.
  2. Heat 1 tbsp mustard oil in a non stick pan. Add cinnamon stick and cumin seeds to it. When it starts spluttering, add bay leaves, cloves, garlic cloves and soaked red chillies to it. Then add coriander powder and sprinkle a little water to it.
  3. Add marinated chicken to it and saute it till it is half done and becomes light brown in color. Add vinegar and sugar powder to caramelize the chicken pieces.
  4. Mix in beaten yogurt and a little water to it. Add salt and cover the pan to let the chicken soak in the flavor at a low flame.
  5. Now authentic Bhuna Kukda is ready. Enjoy it with hot parathas or roti.
