Rajasthani kadhi is a very popular dish in the households of the state.this kadhi has some delicious flavours which comes from the spicy masala used in the dish.

Ingredients Serving: 2

  1. For kadhi mixture:
  2. 1 cup sour full fat curd
  3. 2 cup water
  4. 3 tsp besan
  5. 1/2 tsp turmeric powder
  6. Salt to taste
  7. For tempering Rajasthani kadhi
  8. 2 tsp oil
  9. 1/2 tsp mustard seeds
  10. 1/4 tsp Fenugreek seeds
  11. 1/2 tsp cumin seeds
  12. 1 small tejptta
  13. A pinch of asfoetida
  14. 1/2 tsp red chilly powder
  15. 2 DRY RED CHILLY

Instructions

  1. Making Rajasthani kadhi recipe:
  2. Mix the above mentioned kadhi ingredients including salt, till smooth in a pan.use a wired whusk to stir.no lumps should be there.
  3. Keep on a low flame and stirring at intervals simmer and cook for 12 to 15 minutes till the gram.flour gets cooked and the kadhi thickens a bit.
  4. The consistency of the dahi kadhi is neither thick nor thin.
  5. Keep aside covered.
  6. Tempering Rajasthani kadhi:
  7. Heat oil and ghee in a small pan .
  8. Add the mustard seeds, along with the bay leaf first.
  9. Let the mustard seeds start popping .
  10. Then add cumin seeds and fenugreek seeds .
  11. Stir and add red chilly and Asafoetida
  12. Fry for a few seconds till the red chilly darken a bit.
  13. Switch off the flame
  14. Add the red chilly powder and stir
  15. Immediately pour this tempering into the kadhi
  16. Cover and let the tempering flavour infuse with Rajasthani kadhi
