ABOUT Vrat ka Dhokla (Navratri Special) RECIPE

Vrat ka Khana or fasting food can be fun if you use the ingredients to full potential. This is fermented dhokla made from samo (bhanger, samvat, varai or bran millet) which is used during fasting in India. It is deliciously soft and spongy.

Ingredients Serving: 4

  1. For the Dhokla:
  2. 1 cup Samo ke chawal (Barnyard millet or Bhagar)
  3. 3 cup butter milk
  4. 1 tbsp chilli ginger paste
  5. 1 tsp lemon juice
  6. 1 tsp Eno powder
  7. Salt to taste (white rock salt)
  8. For tempering:
  9. 1-2 dry red chillies
  10. 1 tsp cumin seed
  11. 3-4 curry leaves
  12. 2 tbsp Oil
  13. 1 tbsp sugar
  14. 1 cup water
  15. 3-4 Green chillies cut lenth wise

Instructions

  1. Soak samo chawal in buttermilk for half an hour. Blend the soaked samo chawal in a blender till smooth.
  2. Add all other ingredients to the batter, mix well and pour into a greased plate or steaming vessel and steam for 15 minutes.
  3. Let it cool completely. Cut in desired shapes.
  4. For the tempering: Heat oil in a pan and add all the ingredients and pour it over the steamed dhokla.
  5. Serve hot with your favorite chutney.
