ABOUT Chicken Bhuna Masala RECIPE

Chicken Bhuna Masala is one authentic dish , in which water isn’t used and chicken is cooked totally in oil . No doubt ! A very delicious dish . Juicy chicken pieces perfectly cooked in oil and chicken ‘s natural juices turns out to be an outclass dish .

Ingredients Serving: 3

  1. Chicken washed and pat dried 750 grams
  2. Onions big sized 4 finely chopped
  3. Tomato red and ripened big sized 2 finely chopped
  4. Cinnamon powder 1/4 teaspoon
  5. Green cardamom 4
  6. Black big cardamom 3
  7. Cloves 3
  8. Green chillies 4 finely chopped
  9. Garlic pods 10 finely chopped
  10. Ginger 1 inch piece finely chopped
  11. Sesame oil 6 tablespoons
  12. Yogurt 1 .5 cup 200 grams
  13. Salt 1 tablespoon
  14. Turmeric powder 3/4 teaspoon
  15. Kashmiri Red chilli powder 2 tablespoons
  16. Coriander powder 4 teaspoons
  17. Kasuri methi / Dried fenugreek leaves 3 tablespoons crushed
  18. Coriander leaves finely chopped 1/2 bunch

Instructions

  1. In an heavy based pan, heat oil .
  2. Add the whole spices .
  3. Add the chopped green chillies , chopped garlic , ginger and fry till roasted .
  4. Add the finely chopped onions. Sauté till brown .
  5. Add chopped tomatoes . Sauté till mushy .
  6. Add the chicken and fry for 2 to 3 minutes . keep stirring in between . Maintain a medium flame .
  7. Fry till the chicken discolours .
  8. Add a cup of yogurt ( water free ) .
  9. Add the coriander leaves , reserving few for garnishing .
  10. Cover the pan for 5 -7 minutes and cook .
  11. Add 3/4 teaspoon turmeric powder .
  12. Add 2 tablespoons Kashmiri Red chilli powder .,
  13. Add 4 teaspoons coriander powder .
  14. Add salt .
  15. Add 1 teaspoon Garam Masala .
  16. Mix all and cover the pan again . Cook for another 5-7 minutes under medium flame .
  17. Keep stirring .
  18. At this stage , the masala and the chicken binds well . Chicken gets a good colour .
  19. Add crushed kasuri methi
  20. Give a quick stir and cover the pan . Cook for 3 minutes . Let the flavours infuse in the chicken .
  21. Remove the cover .
  22. In high flame , stir and allow the masala to thicken .
  23. Switch off the flame .
  24. Add freshly chopped coriander leaves .
  25. Serve hot with steamed rice / Pulkas/ pulaos/ naan.
