ABOUT Aachari Paneer Tikka RECIPE

Juicy, succulent, melt in the mouth Paneer with tongue tickling Aachari flavour.

Ingredients Serving: 6

  1. For Aachari Masala
  2. 1 tbsp saunf
  3. 1/2 tsp jeera
  4. A Pinch of methi seeds
  5. 1/2 tsp kalunji
  6. 1/2 tsp mustard seeds
  7. Other ingredients
  8. 500 g paneer cut into thick big cubes
  9. 1 cup curd
  10. 1 tsp Ginger garlic paste
  11. 1 tbsp Besan
  12. 1/2 tsp haldi powder
  13. 1/2 tsp garam masala powder
  14. 1/2 tsp amchur powder
  15. 1 tsp Kashmiri red chilly powder
  16. 1 onion finely chopped
  17. 1 green chilly chopped
  18. For serving
  19. Tandoori onion salad
  20. green chutney

Instructions

  1. Whisk curd till smooth add ginger garlic paste, kashmiri red chilly powder ( it will impart a good colour) and one tbsp of roasted besan ( it will help in the curd
  2. Take a pan heat oil ( if you like mustard oil then you can use that for peculiar aachari flavour), put the all aachari Masala and saute for a min, then add onion and green chilly, saute till onions are slight brown, now add turneric powder, amchur powder, garam masala to this mixture. Switch off the gas and add this onion mixture to the curd mixture and mix well
  3. Add paneer cubes to the prepared aachari marination and gently mix to coat it well. Keep aside for 30-45 mins
  4. Now either grill these tikka's in an oven/ tandoor or else you can also make this in a grill pan or non stick pan by adding little oil ( allow the mixture/ marignate to dry completely and paneer to get charred). To get that smoky flavour of tandoor, one can also roast individually paneer ( with the help of tongs) pieces on gas flame for a sec
  5. Serve hot with onion salad and green chutney
