ABOUT Pakistani Jeera Pilaf RECIPE

Pakistan ‘s Jeera Pilaf is a spicy version of Indian mild jeera pulao / rice .

Ingredients Serving: 6

  1. Basmati rice washed and soaked for 20 minutes 1 kilogram
  2. Bay leaves 4
  3. Cinnamon sticks medium 3
  4. Cumin seeds 2 tablespoons
  5. Cardamom green 3
  6. Black cardamom 2
  7. Cloves 4
  8. Green chillies slit lengthwise 5
  9. Onion big sized 2 thinly sliced
  10. Ginger garlic paste 1 teaspoon
  11. Salt 1.5 tablespoons
  12. Garam Masala 1 teaspoon
  13. Water 5 cups for 5 cups rice .
  14. Coriander leaves a bunch
  15. Ghee 2 tablespoons
  16. Vegetable oil 3 tablespoons

Instructions

  1. In a cooking pot , heat 2 tablespoons ghee .
  2. Add all the listed whole spices , cumin seeds . Fry for a minute .
  3. Add green chillies .
  4. Fry for 2 seconds .
  5. Add sliced onions and sauté till golden brown .
  6. Add ginger garlic paste . Sauté till raw smell leaves .
  7. Add 1/2 cup coriander leaves .
  8. Add salt .
  9. Add the drained rice and fry gently for 4 minutes .
  10. Measure water : rice 1 : 1 and pour the measures water to the cooking pot .
  11. Cover the pot once the water started boiling along with the rice .
  12. Cook under medium flame for 10 minutes .
  13. Garnish with another half cup of fresh coriander leaves .
  14. Pakistani Jeera Pilaf is ready to serve .
  15. Serve hot with Karahis/ Nirahis.
