ABOUT Lahmacun : a middle eastern bread delicacy RECIPE

I have made it in a tart form and replaced all purpose flour with wholewheat flour making it even healthier.

Ingredients Serving: 4

  1. For tart dough
  2. Whole-wheat flour 130gms
  3. Lukewarm milk 1/4 cup
  4. Sugar 1tsp
  5. Active dry yeast 1tsp
  6. Salt 1/2tsp
  7. Keffir 1/2 cup
  8. Water as required to knead the dough
  9. For filling :
  10. Goat mince 150gms
  11. Finely chopped onion 1 cup
  12. 1tbsp garlic paste
  13. Chopped green garlic 1tbsp
  14. Salt
  15. Cumin powder 1tsp
  16. All spice powder 1tsp
  17. Sumac 1tsp
  18. Fresh turmeric paste 1tsp
  19. Tomato puree 1/2 cup
  20. Chopped coriander 1/4 cup
  21. Chopped mint leaves 1/4 cup
  22. Sliced onion 1
  23. Butter 2tbsp
  24. 1/2 cup sliced aubergine
  25. Roasted pinenuts 1/2 cup
  26. Pomegranate seeds 2tbsp
  27. Red chilli flakes 2tsp
  28. 1 egg yolk for egg wash

Instructions

  1. To activate yeast: In a bowl put warm milk with sugar and stir
  2. Sprinkle yeast and keep aside for about 10 minutes
  3. In a bowl put flour and mix salt
  4. Now add in activated yeast, keffir and water
  5. Prepare a sticky dough and cover it with a damp cloth.
  6. Keep aside to proof for about 1hour
  7. Meanwhile in a sauce pan put oil and pan fry aubergine slices.
  8. Once done strain and keep aside
  9. Sprinkle with some salt and red chilli powder
  10. In another pan add remaining oil and add onion to it
  11. Cook till golden brown
  12. Add in garlic paste and chopped green garlic
  13. Cook for another 10 minutes
  14. Now add in salt, turmeric paste, tomato puree, cumin powder, all spice powder and red chilli powder
  15. Cook on slow flame till the gravy leaves the sides of the pan
  16. Now add mince and stir continuously
  17. Keep breaking the mince
  18. Cook on slow flame and add coriander and mint leaves
  19. Once the mince is cooked switch off the flame and keep aside
  20. Punch in the dough and degas it
  21. Roll it into a rectangle with the help of a rolling pin and trim it sides with a knife
  22. Thicken the edges of the tart using the trims
  23. Preheat the oven at 200℃
  24. Place aubergine slices side by side on the tart
  25. Now put onion slices over it
  26. Spread the prepared goat mince over this
  27. Give egg wash to the thickened edges
  28. Bake for 25-30 minutes
  29. Now sprinkle pinenuts and pomegranate seeds
  30. Also splash some sour cream and serve hot
