Delicious Mouthwatering Mutton curry, best served with rice/roti or pulao

Ingredients Serving: 4
Curry Cut Mutton – 1/2 kg
Turmeric Powder – 1 tsp
Salt to taste
For Curry: Onion – 2 large sliced thinly
Curry leaves 2 sprigs
Green chili – 2 slit
Ginger Garlic Paste – 2 tbsp
Tomato – 3 large pureed
Chilli Powder – 1 tbsp
Coriander Powder – 2 tbsp
Cumin Powder – 2 tsp
Garam masala powder – 2 tsp
Cashews – 50 grams
Coriander leaves chopped 3 tbsp
Salt to taste
Water as required
For Seasoning: Oil – 2 tbsp
Ghee – 3 tbsp
Fennel Seeds / Saunf – 1 tsp
Cumin Seeds – 1 tsp
Cinnamon 1 inch
Cardamom – 5
Cloves – 4
Star Anise -1
Instructions
Take mutton, salt and turmeric powder in a pressure cooker and cook for 5 whistle. Simmer the flame for 15 mins, turn off the heat and let the steam go all by itself.
Take cashews in a bowl, add warm water and soak for 30 mins. Add it in a blender with 3tbsp water and puree till smooth.
Heat oil and ghee in a large kadai/pan, add all seasoning ingredients and let it sizzle.
Add in onions, curry leaves and green chilies and Saute till translucent
Add ginger garlic paste and saute till raw aroma leaves.
Add in tomato puree and cook till oil separates
Add in spice powders and salt and mix well.
Add in cooked mutton along with the water and simmer for few minutes
Add in pureed cashew and mix well.Simmer for 15 to 20 mins.
Add in coriander leaves and mix well. Serve hot with rice/roti or pulao
