ABOUT Stewed Sweet Peppers (Peperonata) RECIPE

A Southern Italian side dish of sweet bell peppers .it's wonderful with spooned onto roasted slices of bread.

Ingredients Serving: 4

  1. 4 red, yellow, and orange green bell peppers, cored, seeded
  2. 2 tbsp extra-virgin olive oil
  3. 4 cloves garlic,
  4. 2 medium onion, thinly sliced
  5. 1 tbsp. vinegar
  6. salt and freshly ground black pepper, to taste

Instructions

  1. Take bell peppers and cut into 1/4" strips thinly sliced
  2. Heat oil in a saucepan over medium-high heat.
  3. Add peppers, garlic, onions, and 1\2 cup water and season with salt and pepper.
  4. Cook, partially covered and stirring occasionally, until peppers are soft .
  5. Stir in vinegar and transfer to a serving bowl.
