The Agri community belongs to the west coast of Maharashtra and I have derived their unique flavours for this chicken preparation.

Ingredients Serving: 3

  1. Chicken 250 gms
  2. Ingredients for Vatan:
  3. 8-10 cloves of garlic
  4. 2 inch ginger
  5. 3-4 green chillies
  6. 3 tbsp of grated coconut
  7. Ingredients for Rassa:
  8. 1 medium sized onion, roughly chopped
  9. 2-3 bay leaves
  10. 3 cloves
  11. 1 star anise
  12. 2 dried red chillies
  13. 2 tomatoes roughly chopped
  14. Water
  15. Salt to taste
  16. Agri garam masala 2 tbsp
  17. Turmeric powder 1 tsp

Instructions

  1. Take the ingredients for Vatan and dry roast them till they turn golden brown. Once cooled, grind them into paste.
  2. In a wok, add oil to heat, then add the onion, all the sabut garam masalas and cook till the onion turns translucent.
  3. Now add the tomatoes and cook for another few minutes till it turn mushy. Again cool this mixture and blend it into a puree.
  4. In a wok, add the prepared vatan and puree and stir on medium flame for 5-7 mins. Then add the chicken, salt, turmeric powder and agri masala.
  5. Cover with a lid and let it cook on a slow flame for 25-30 minutes or till the chicken is well cooked.
  6. Serve it with steamed rice and bhakri.
