A Maharashtrian preparation of baby brinjals which is sweet, spicy and tangy!

Ingredients Serving: 6

  1. 12 small brinjals
  2. For the stuffing:
  3. 1 and 1/4 cup onion sliced
  4. 2 tsp coriander seeds
  5. 1 tsp cumin seeds
  6. 6 black peppercorns
  7. Other Ingredients:
  8. 1 and 1/2cup of finely chopped onion
  9. 3 tsp red chilli powder
  10. 1 tbsp tamarind pulp
  11. 1/2 tsp turmeric powder
  12. 1/4 cup of roasted and crushed peanuts
  13. 2 tsp jaggery
  14. 1 tbsp oil
  15. Salt to taste

Instructions

  1. Dry roast all the ingredients for the stuffing, then let them cool down and blend them to a paste. Add little water if required.
  2. Wash and dry the brinjals. Slit each brinjal once through and then again at the right angle to make 4 equal parts without separating them from the stem. Stuff these brinjals with the prepared paste.
  3. Mix together the onions, red chilli powder, crushed peanuts, jaggery and salt.
  4. Heat oil in a pan and add all these ingredients. Now add 1 cup water n bring it to boil. Then add the stuffed brinjals to it and cook on a low flame till the gravy becomes thick.
  5. Serve it hot.
