ABOUT Vegetarian Fish Gravy (Chettinad Saiva Meen Kuzhambu) RECIPE

This dish is a well known chettinad cuisine, it is a meatless dish wherein the vegetarian fish in the gravy is legume based.

Ingredients Serving: 4

  1. Vegetarian Fish Ingredients:
  2. 1 cup - Cow peas/Red chori
  3. 2 Dry red chillies
  4. 3 Garlic cloves
  5. 1 teaspoon - Fennel seeds
  6. Salt to taste
  7. Gravy Ingredients:-
  8. 2 cups - Tamarind extract
  9. 15 Shallots (diced)
  10. 2 Tomatoes (chopped)
  11. 5 Garlic cloves
  12. 1/4 cup - Gingelly oil
  13. 1/2 teaspoon - Mustard seeds
  14. 1 teaspoon - Fenugreek seeds
  15. Few curry leaves
  16. 1 teaspoon - Coriander powder
  17. 1 teaspoon - Chilly powder
  18. Salt to taste

Instructions

  1. Soak the cow peas overnight in water. Grind the cow peas with dry red chillies, garlic cloves, fennel seeds, salt to make a thick paste.
  2. Next grease a baking sheet and move the ground paste to it, make sure to even them out as much as possible. Steam for 5 minutes.
  3. After the steamed mixture becomes warm, take it out and cut evenly into medium sized pieces.
  4. Heat a pan with little oil and shallow fry the vegetarian fish pieces till they turn golden brown in colour. Once the desired result is achieved, keep this aside.
  5. Take a separate kadai or pan and heat the gingelly oil in it, fry the mustard seeds, fenugreek seeds and curry leaves.
  6. Also put in the ingredients, shallots, garlic cloves and chopped tomatoes, saute this mixture for a few minutes till the shallots are partly cooked.
  7. Next step is to add in the tamarind extract along with salt, coriander powder, chilly powder, and cook it on medium heat for about 5 minutes.
  8. Now add in the fried vegetarian fish pieces to the gravy, close the pan with a cover and do not bother it for a while.
  9. Cook this gravy until it turns thick and the oil separates itself. Serve piping hot with steamed rice and papads.
