Khamni is signature dish of Surat region. I have tried it many ways, here sharing one.

Soak dal for an hour.
Grind the dal and add curd, salt, besan, sugar, oil and mix well.
Mix soda and transfer batter immediately to the container to be steamed .
Steam it for 15-20 minutes on a medium flame.
Let it cool for some time and crush the khaman, spread it in a flat plate for cooling.
Heat oil in kadhai, add rai, hing, chillies, curry leaves and crushed khaman. Add sugar and mix well.
Garnish with pomegranate seeds, coriander and serve with hot cup of Tea.
