Yummy easy version of original Enchiladas

Ingredients Serving: 4

  1. For sauce:
  2. 3 big tomatoes pureed
  3. 1 tbsp Red chili sauce
  4. 3 tbsp tomato sauce
  5. 1 tsp red chillies flakes
  6. 1 tsp Oregano
  7. 1/8 tsp salt
  8. For stuffing:
  9. 2 tbsp boiled red kidney beans
  10. 2 tbsp boiled corn
  11. 3 tbsp grated cheese
  12. 1/8 tsp salt
  13. 2 tbsp finely chopped bell pepper
  14. 2 tbsp finely chopped Onion
  15. 1 tsp Oregano
  16. 1tsp red chili flakes
  17. 5-6 bread
  18. For topping
  19. 1/3 cup or more grated cheese
  20. 1 tsp Oregano
  21. 1 tsp parsley
  22. 1 tsp Red chili flakes (Optional)

Instructions

  1. Mix all ingredients mentioned under sauce section in a saucepan. Bring to boil, cook for a minute. Switch off. Keep it aside
  2. Preheat oven to 180. Grease baking pan
  3. Mix all ingredients mentioned under stuffing section. Keep it aside
  4. Trim edges of bread. Gently roll with rolling pin
  5. Place stuffing at centre, apply water on edges. Seal the bread and place in baking dish
  6. Pour prepared sauce over bread. Add grated cheese, oregano, parsley, red chillies flakes as topping over sauce
  7. Bake for 16-20 minutes. Serve warm
