ABOUT Cracked Wheat & Oats Vegetable Khichdi RECIPE

If you don't know where to begin when it comes to making a healthy food choice-- or if you are already following a healthy, wholesome diet but need some new recipe idea--I have one super healthy recipe to share with you all today. It is Cracked Wheat & Oats vegetable Khichdi. Sounds already healthy, right?

Ingredients Serving: 4

  1. 1/2 cup cracked wheats (fada)
  2. 1/4 cup split moog dal
  3. 2 tbsp split moog dal with skin
  4. 2 tbsp Oats
  5. 2 tbsp Ghee
  6. 1 tsp Cumin seeds
  7. 1/2 cup chopped onions
  8. 1 cup of mixed vegetables of your choice (I used chopped potatoes, green peas, some soybeans, some green onions, some corn, chopped methi leaves, chopped cauliflower)
  9. 1/2 tsp cinnamon-cloves powder
  10. 1 tsp turmeric powder
  11. 1 tbsp Ginger-Garlic Paste
  12. 1 tsp green chilli paste
  13. 1 tsp garam masala or bisi belle rice masala
  14. Some cashews and raisins
  15. 2 tbsp Chopped Cilantro
  16. Salt to taste

Instructions

  1. Wash and soak the cracked wheats (fada) and both dals for about 15-20 minutes.
  2. Heat the ghee in a pressure cooker or a big heavy bottom pot. Add the cumin seeds and saute it well.
  3. Add the chopped onions and cook till it gets tender. Then add the ginger-garlic paste and green chilli paste in it.
  4. Cook for 1-2 minutes and add all the mixed vegetables of your choice. Season it with turmeric powder, cinnamon-cloves powder and garam masala.
  5. Add the soaked cracked wheats and both dals. Mix it all well together. Then add the oats, raisins and cashews and mix it again.
  6. Season it with salt and add required water. Cover the pressure cooker and cook till 2-3 whistles blow.
  7. Garnish with chopped cilantro and serve it hot with yogurt/kadhi or chaas.
