Ingredients Serving: 10

  1. Green mango 2 1/2 kg
  2. Mustard oil 500gm
  3. Whole black pepper 125gm
  4. Fenugreek seeds 125gm
  5. Fennel seeds 125gm
  6. Salt 1/2 kg
  7. Red chilly pwd 1tbsp
  8. Turmeric 2tsp
  9. Garam masala 1tsp
  10. Coriander pwd 1tbsp
  11. Cumin seeds 25gm
  12. Kalonji or nigella seeds 30gm

Instructions

  1. Cut the washed mangoes in small pieces, spread on a cotton sheet and let it dry in sunshine for half an hour.
  2. Now coarsely grind the dry spices.
  3. Tranfer the mangoes in a broad bowl .
  4. Add 1/4 of oil in dry spices and mix well , spread this spices over the mangoes and mix well . Untill all the masala gets coated on the mango pieces.
  5. Transfer into a sterlized container, add the leftover oil and close the lid.
  6. Place it in sunshine for 6-7 days.
  7. Now we can relish the pickle .
