ABOUT Eggless Kaju Biscuit | Cashew cookies RECIPE

This requires very few ingredients, but the taste is amazing and it gives a nice bite too. I made it in two batches, in the first I added a little too much sugar, so it became dark and chewy, it was not bad at all. Then in the second batch, I added enough and make it small cookies but you can make any size you want. You need to make dough kind of batter, not runny, so you can shape your cookies. I prefer this over kaju katri any time. This is perfect for any occasion, because it requires no baking soda, eggs or any baking essentials and done in a few minutes.

Ingredients Serving: 6

  1. 1 cup Kaju\ Cashews
  2. 1/2 cup Sugar
  3. A pinch of vanilla essence
  4. 4 tbsp warm milk
  5. A pinch of saffron

Instructions

  1. If you store the nuts in fridge, take it out at room temperature. Heat the oven at 176 degrees celsius. Then grind it in a blender till it becomes powder.
  2. Add saffron to warm milk and mix it. To it add the granulated sugar, essence, saffron milk, spoon by spoon only, don't add it all together.
  3. Make a dough, roll it or give a cookie shape. Take a baking dish, put the parchment paper in it and put your cookies there. Bake it for 15-20 minutes.
  4. Keep checking as it will burn quickly. Once it's nice and brown from the sides, take it out.
