ABOUT SenaiKizhangu Urundai Kuzhambu || Elephant Yam Kofta Curry RECIPE

Elephant Yam is always cooked and fried seldom gets a kofta avatar. In this recipe elephant yam is sauteed and fried, later added to the curry.

Ingredients Serving: 4

  1. For Grinding :
  2. 1 tablespoon Coriander seeds
  3. 5 shallots
  4. 1 teaspoon Fennel seeds
  5. 1/2 teaspoon Cumin seeds
  6. 1 teaspoon Poppy seeds
  7. 5 cloves Garlic
  8. 1/3 Cup grated coconut
  9. 4 Red Whole Dried chillies
  10. 1" Cinnamon stick
  11. 3 cloves
  12. 1 Cardamon
  13. 2 tsp Oil
  14. For Koftas:
  15. 1 Cup grated Elephant Yam
  16. 1/3 finely chopped onion
  17. 1/4 tsp Garam masala
  18. 1/2 tsp red chilli powder
  19. 1/4 tsp turmeric powder
  20. 1/4 tsp fennel powder
  21. 1 tablespoon Oil
  22. 1/4 litre oil for frying
  23. For Gravy
  24. 1 Chopped Onion
  25. 1 Chopped Tomato
  26. 2 " Cinnamon Stick
  27. 3 Cardamons
  28. 1 Star Anise
  29. 1/4 tsp Fennel seeds
  30. 5 Cloves chopped Garlic
  31. 1/2 Teaspoon turmeric Powder
  32. 1 Sprig Curry leaves
  33. 1 tablespoon Chopped Coriander leaves

Instructions

  1. First the ingredients in the grinding list get into the pan for roasting. In a heated pan add oil, then coriander seeds, roast for 30 seconds
  2. Next add shallots and garlic, saute it.
  3. Next fennel seeds,cumin seeds, poppy seeds and roast them.
  4. Next add dried chillies, cinnamon stick, cardamon and cloves.
  5. Next add grated coconut and roast. Roast till the coconut releases the aroma.
  6. Remove from heat and allow it cool. Later grind and keep it aside.
  7. Preparing Yam. Grind elephant yam to a uniform texture and place in a muslin cloth. Squeeze so that all the moisture content is removed from the yam.
  8. Making of Koftas. In a heated pan add oil.
  9. Add onions saute till they turn translucent.
  10. Now add prepared yam and saute for 2 minutes on medium flame
  11. Add turmeric powder, garam masala, chilli powder, fennel powder, salt and saute for another 2 minutes.
  12. By now the yam should be cooked.
  13. Remove from heat and allow it to cool down.
  14. Divide into equal parts and shape into balls.
  15. Deep fry in hot oil and keep aside.
  16. Making of gravy : In a heated pan add oil.
  17. Add fennel, Cinnamon, star anise and cardamon.
  18. When the above gets roasted, add Onions,garlic and tomatoes. Add half quantity of salt and saute.
  19. When the onions and tomatoes get mushy, add turmeric powder and the ground masala.
  20. Now add 2.5 cups water and bring to boil. Simmer for 3 minutes. Check for salt and adjust accordingly.
  21. Crush curry leaves and add to the curry.
  22. Add chopped coriander leaves before removing from heat.
  23. Add the fried yam balls into the curry and serve.
