ABOUT MALVANI CHICKEN MASALA RECIPE

Malvani cuisine is the standard cuisine of the South Konkan region of Maharashtra and Goa, and some northern parts of West Karnataka. Although Malvani cuisine is predominantly non-vegetarian, there are many vegetarian delicacies.Malvan is a town in the Sindhudurg district on the west coast of Maharashtra.Malvan being a coastal area in Konkan, it has its own distinct way of cooking food. Malvani chicken masala is a gravy based spicy curry which is very popular in many South Indian states.It needs to be done with 2 types of spices-one is powder & another is masala paste.It has the sublime earthiness that comes from dry roasting fresh coconut and blending it together with spices. Malvani cuisine is a concoction of liberal use of coconut in various forms such as grated, dry grated, fried, coconut paste,coconut milk and the Malvani masala, a form of dried powder masala.

Ingredients Serving: 4

  1. Chicken- 750 gms(skinned & cut into pieces on the bone)
  2. Onions- 2medium
  3. Ginger-garlic paste - 1 table spoon
  4. Turmeric powder- 1 tea spoon
  5. Dried red chillies - 8(broken)
  6. Cumin seeds - 3/4 teaspoon
  7. Coriander seeds - 3 teaspoon
  8. Black peppercorns - 7 to 8
  9. Black cardamoms- 2
  10. Green cardamoms - 3 to 4
  11. Cloves - 2 to 3
  12. Cinnamon stick - 1"
  13. Bay leaf - 1
  14. Scrapped coconut - 3 table spoons
  15. Green chillis - 5 to 6
  16. Ginger pieces(1/2") - 1.5 table spoons
  17. Oil- 4 table spoons
  18. Garammasala powder - 1/2teaspoon
  19. Salt & sugar - as per taste

Instructions

  1. Wash the chicken pieces properly & pat dry.
  2. Now,apply salt,turmeric powder & ginger- garlic paste on the chicken.Fold them and Keep aside for 1hour.
  3. Meanwhile Dry roast cumin seeds,black peppercorns,red chillies and coriander seeds till fragrant.Cool and grind to a powder.
  4. Chop the onions finely.
  5. Put ginger pieces,scrapped coconut & green chillis in a mixer jar.Grind them into a fine paste with a little water.
  6. Now,heat oil in a pan.Temper it with both black & green cardamoms,cloves,cinnamon & bay leaf.Wait till the fragrance comes out.
  7. Now,add finely chopped onions and saute till onion is golden.
  8. Now,add the marinated chicken to the pan & mix well.
  9. Add the masala powder & cook for 3-4minutes.
  10. Now,add masala paste & mix again.
  11. Add 1/2cup of water & mix.Cover & cook till the chicken is soft.
  12. Uncover the pan,adjust salt & sugar as per taste.
  13. Add garammasala powder.Mix well & cook for 1 minute.
  14. Dish out & serve hot with steamed rice/paratha/chapati.
