ABOUT Kashmiri Dum Aloo RECIPE

baby potatoes in a spicy vibrant curd based gravy. a delicious recipe from the kashmiri cuisine. out of all the recipes i make with baby potatoes, kashmiri dum aloo is the most repeated one. the reason being its easy and i just need to prepare rice and a side veggie dish or salad by the side. this recipe of kashmiri dum aloo is more like the way the actual kashmiri dum aloo is. not the restaurant ones. what is served in restaurants as kashmiri dum aloo is not the real stuff and is actually a creamy, sweet gravy based dum aloo.

Ingredients Serving: 4

  1. 12 small size potatoes (boiled and peeled)
  2. 2 cups curd
  3. 1/4 cup kashmiri chilli paste
  4. 1.5 tbsp ginger powder
  5. Oil for deep frying potatoes
  6. 1/2tsp asafoetida powder
  7. 3/4tsp turmeric powder
  8. 1tbsp crushed coriander speeds
  9. 2tbsp kashmiri chilli powder
  10. 1.5 tbsp Fennel powder
  11. 1tbsp coriander powder
  12. 1/2tbsp crushed black cardamom
  13. 1tbsp Roasted cumin powder
  14. 1tsp crushed green cardamom
  15. 1tsp crushed cloves
  16. 1/2tsp cinemon powder
  17. 1tbsp garam masala powder
  18. Salt to taste
  19. Some chopped fresh coriander leaves

Instructions

  1. Take bowl add curd,chilli paste, ginger powder mix and whisk well to get a smooth mixture
  2. When curd & chilli mixture is prepared keep a side.
  3. Take a kadhai and heat oil for deep frying potatoes.
  4. Poke hole all over in all the potatoes
  5. On medium flame fry this potatoes.
  6. Deep fry until they become golden brown and crisp.
  7. Now ready this deep fryed potatoes let's make a curry.
  8. Take a kadhai heat 2tbsp oil then add asafoetida,turmeric powder,Kashmiri red chilli powder, crushed coriander speeds saute for a few seconds
  9. Then add 1.5 cup of water allow to comes boil,
  10. then add fennel powder,black cardamom powder,green cardamom powder, cloves powder,Coriander powder,roasted cumin powder and cinemon powder mix well
  11. Untill the mixture comes to a boil.
  12. After 3 minutes add curd chilli mixture and continusly stir it till the mixture comes to a boil.
  13. After comes boil add salt mix it.
  14. Now add deep fryed potatoes mix it and cover the lid and cook it in 8 minutes low to medium flame.
  15. After 8 minutes open the lid and change the position of potatoes.
  16. once again cover the lid and cook it in another 5 minutes.
  17. after 5 minutes open the lid and add garam masala powder mix well.
  18. Let it cook for a 1,2 minutes then add chopped coriander leaves and mix it.
  19. Now switch off the flame and serve it. Enjoy!
