MILKMAID India's one of the most popular condensed milk is cooked for three hours in a pressure cooker without whistle on a low flame. The best Dulche de Leche mixed with roasted nuts and some tutti frutti for the French Macaron Shells. The best ever filling with full of milk nutrients and nuts are added to the Macaron's. Being Holi, The colour festival of India I've added coloured sprinklers on top of the Macaron's before baking.

Ingredients Serving: 5

  1. For Macaron shells
  2. Almond flour 85 gms
  3. Egg white 150 gms
  4. Icing sugar 140 gms
  5. Castor Sugar 50 gms
  6. Cream of tartar a pinch
  7. For filling. Dulche de Leche with mixed nuts
  8. Milkmaid's condensed milk 1 tin
  9. Cashew 5
  10. Almond 5
  11. Hazelnut 5
  12. Pistachios 10
  13. Walnut 5
  14. Tutti frutti 20 gms

Instructions

  1. Sift icing sugar and almond flour together and keep it aside.
  2. Whisk egg white with cream of tartar till frothy. Add castor sugar little by little till meringue turns shiny and stiff peaks. Add Teal colour to the meringue.
  3. Fold in the dry ingredients little by little and gently fold till ribbon consistency.
  4. Pipe out on a silpat and sprinkle coloured sprinklers on top of the macronage. Let it rest for 3 hours till the top skin of the Macaron shell's dries well.
  5. Meanwhile let's prepare for the Filling. Dulche de Leche from Milkmade's condensed milk.
  6. Fill pressure cooker with water. Immerse Milkmaid's e's condensed milk tin into the water as shown in the picture.
  7. Water has to cover the tin well. So fill the cooker with 3/4. Cover with lid placing no whistle. Keep the gas stove on low flame and cook for 3 hours.
  8. Cooking Milkmaid's condensed milk in this method gives homemade Dulche de Leche. Do not open the tin immediately. Let it cool.
  9. Roast the mixed nuts and blend coarsely. Add Milkmaid's s Dulche de Leche with nuts. Filling is ready for the Macaron shell's.
  10. Mix well till everything combines well.
  11. Fill the Macaron shell's with the Dulche de Leche nut filling.
  12. Can add tutti frutti too.
  13. Fill all the shell's and is ready to consume.
  14. French Macaron with Dulche de Leche mixed with roasted nuts and some tutti frutti with coloured sprinklers on top is ready for the Holi festival for friends and family.
