ABOUT RECHEAD MASALA PRAWNS CURRY RECIPE

Rechead Masala Prawns, the name itself, conjures up an image of spice and sophistication. It being a lazy rainy day I decided to cook Prawns in Rechead Masala to spice things up a bit. It is quick to make, requires few ingredients and most of the preparation can be done a day earlier and therefore at the time of serving you do not have to cook for a long time. Whenever I make Rechead masala I make a bottle of it and keep it in the freezer. This way I need not make the masala every time I am making Fish or Prawns. Just thaw the amount I need when I need it and keep the rest back for another seafood dish.

Ingredients Serving: 2

  1. Prawns 300 grams
  2. Oil 2 table spoons
  3. FOR MARINATING THE PRAWNS : Turmeric ½ tea spoon
  4. Salt ½ teaspoon
  5. Lemon juice 1 table spoon
  6. FOR THE RECHEAD MASALA
  7. Dry red chillies 10
  8. Pepper corns ½ tea spoon
  9. Cumin seeds 1 tea spoon
  10. Vinegar ½ cup for grinding
  11. Cloves 3
  12. Cinnamon stick 1 inch

Instructions

  1. Remove the shells of the prawns and de-vein them.
  2. Wash the prawns with turmeric and salt twice and drain all the water.
  3. Once prawns are dry marinate them with turmeric, salt and lemon juice.
  4. And keep the prawns marinated for a minimum of 30 minutes.
  5. First dry grind the above mentioned masala without adding vinegar first.
  6. Then add ½ cup of vinegar and again grind to a thick paste. Add more vinegar if you need to grind into a thick paste. Paste should be smooth and it should be thicker than the ketchup.
  7. This masala can be stored in the fridge for upto a week. You can use it for your any seafood curry. You can even use this masala for marinating chicken and then grill it. Whatever you make with this masala, it will be yumm…
  8. After half an hour, heat the oil in a pan, add marinated prawns, stir for two minutes and cook covered for ten minutes on a medium flame.
  9. Then add Rechead masala to the prawns and cook covered till the prawns are completely cooked. Add cloves and cinnamon stick powder to the prawns and keep stirring 2-3 minutes to avoid the masala from sticking to the pan.
  10. Stop stirring till the oil starts separating from the masala. Rechead masala prawns is ready…. Serve with lemon and onions.
  11. This Rechead masala prawns tastes best when it is hot.
