ABOUT Capsicum corn masala RECIPE

This is a delicious combination of sweet corn and capsicum in a rich thick gravy.

Ingredients Serving: 4

  1. Corn kernels 1 & 1/2 cup
  2. Capsicum 1 big or 3/4 cup
  3. Garlic 6 cloves
  4. Ginger 1 inch
  5. Green chillies 2
  6. Onion 2
  7. Tomatoes 3 big
  8. Cashews 6-8
  9. Magajtari/melon seeds 1 tbsp
  10. Turmeric 1/2 tsp
  11. Red chilli powder 1 tsp
  12. Coriander cumin powder 1 tsp
  13. Kasuri methi 1/2 tsp
  14. Garam masala 1/2 tsp
  15. Salt to taste.
  16. Cumin seeds 1 tsp
  17. Coriander leaves 1 tbsp

Instructions

  1. Boil corn or microwave with a tbsp of water for 4 minutes.
  2. Chop capsicum in squares.
  3. Crush garlic ginger and green chillies together.
  4. Soak cashews and melon seeds for half an hour.
  5. Take a pan.Add a tsp of oil and put capsicum pieces in it.
  6. Saute for about 2 to 3 minutes till they are cooked little but crunchy.
  7. Remove in a bowl.
  8. Now take a tbsp of oil and a tbsp of ghee in the pan.Add cumin seeds.
  9. Add ginger,chilli,garlic paste.
  10. Saute for a minute.Add finely chopped onions.
  11. Saute till they turn golden.Then add pureed tomatoes.
  12. Saute till it is cooked.Now add salt ,turmeric,chilli powder, coriander powder,kasuri methi and garam masala.
  13. Mix and saute for a minute.Now add cashew and melon seed paste.
  14. Saute for 2 minutes and then add about 3/4 cup water and boiled corn.
  15. Mix well and cook covered for 3 to 4 minutes.
  16. Now add the capsicum which we had sautéed earlier and just cook for a minute.
  17. If you want thin gravy,can add half cup water more.
  18. Mix fresh coriander and serve hot with roti,paratha,kulcha or as a side dish with rice.
