Mahani is no onion garlic recipe.The dish is popular in Kangra valley and a very important part of the Himachali wedding menu.

Ingredients Serving: 4

  1. Black channa 1Cup soaked overnight
  2. Mustard Oil 2Tbsp
  3. Hing 1Tsp
  4. Besan 1Tbsp
  5. Whole wheat flour 1Tbsp
  6. Makki ka Atta/Corn Meal 1Tbsp
  7. Salt to taste
  8. Red chilli powder 2Tsp
  9. Turmeric powder 1Tsp
  10. Coriander Powder 1 1/2 Tsp
  11. Mango Powder/Amchur. 4-5Tsp
  12. Gur 4-5Tsp
  13. Sliced Tomatoes 2Medium size
  14. Coriander leaves chopped. 2Tbsp

Instructions

  1. Wash and soak black channa in sufficient Water overnight.
  2. Boil black channa same way as we boil for black channa gravy.
  3. Drain boiled black channa and reserve the boiled water for later use.
  4. Heat oil in a Kadai on high flame
  5. When oil reaches at smoking point reduce the flame to medium low.
  6. Add hing and all the three flour .
  7. Roast the flour on low flame stir continuously till it is light brown in color.
  8. Now add all the dry Spices and roast them for 1-2 minute on low flame.
  9. Add boiled channa and cook on medium flame for 4-5 minutes.
  10. After 5 minutes add reserved water and gur to the channa mixture .
  11. Approximately 2cups of water is required if reserved water is less add normal water .
  12. Stir well and cook on medium flame for 9-10 minutes until all Spices and gur blends with channa .
  13. Stir in between.
  14. Add sliced tomatoes and boil for another 3-4 minutes.
  15. Tomatoes should be partial cooked.
  16. Garnished with coriander leaves and serve hot with steamed rice, chapati etc.
