ABOUT Grandma's kheer Bengali style RECIPE

This recipe has been in our family since generations. My mother modified it to suit modern needs and I follow her recipe religiously. In the past 8 years, I have made it innumerable times and it has never failed me.

Ingredients Serving: 4

  1. Rice - Govindbhog or any other small grained. 100gms
  2. Full fat milk - 1ltr
  3. Ghee - 1tbsp
  4. Milkmaid sweetened condensed milk - 1tin
  5. Cashews - handful
  6. Raisin - handful
  7. Pistachio - for garnish

Instructions

  1. Add ghee to a heavy bottomed pan and lightly fry the rice, raisins, and cashew.
  2. To the same pan, add the milk and keep stirring occasionally till rice is almost cooked or till milk reduces more than half
  3. Add the tin of sweetened condensed milk and stir frequently till the whole mixture is uniform
  4. Stir occasionally to avoid milk burning and continue till milk has thickened enough. The original 1ltr milk should now be no more than 230-250gms.
  5. Transfer to serving bowl and let rest for 10mins. Garnish with crushed pistachios on top and serve hot. Alternatively, transfer bowl to fridge. After a few hours, garnish with pistachios and serve cold. Tastes wonderful both ways
