Paatishaaptas soaked with the goodness of Nolen Gurer Paayesh is a special dessert prepared in Bengali during festivities or special occasions. The addition of milkmaid condensed milk doubles the sweetness and eases the preparation process

Ingredients Serving: 6

  1. For Milkmaid paatishaapta:
  2. 1/2 cup condensed milk
  3. 1 cup all purpose flour
  4. 2 tablespoon rice flour
  5. Water as needed
  6. 2 tablespoon ghee
  7. 100 grams freshly grated coconut
  8. 2 tablespoon mixed dried fruits
  9. For Milkmaid paayesh:
  10. 1 can milkmaid condensed milk (400ml)
  11. 1/2 cup Milk
  12. 2 tbsp powdered Nolen gur
  13. 1 tablespoon of green cardamom powder
  14. To Garnish:
  15. 6-8 pistachios sliced thin
  16. 6-8 almonds sliced thin

Instructions

  1. Paatishaapta:
  2. Mix condensed milk, grated coconut and chopped dry fruits evenly. keep aside
  3. In a bowl, blend the flours and water to make a smooth batter.
  4. Heat 1 tablespoon ghee in a non stick pan
  5. Pour 2-3 tablespoon of the flour batter and spread evenly like a pancake(a little larger in circumference)
  6. When the batter is cooked, place 1 tablespoon of thecoconut and milkmaid filling at one end and roll up. Repeat for the rest.
  7. Milkmaid paayesh:
  8. Place a saucepan with milk over medium heat and bring it to boi
  9. After boiled, reduce heat and add all the condensed milk, cardamom powder and gur
  10. over medium heat, let the paayesh simmer for 10-15 minutes
  11. Stir occasionally during this time and scrape off the pan bottom and sides every 1 to 2 minutes
  12. once milk has reduced and visibly thickened, take off heat and let cool
  13. To serve, pour the paayesh in a deep/elongated bowl and place the prepared paatishaaptas in them and allow them to soak in the flavour of the paayesh
  14. serve chilled/at room temperature garnished with sliced almonds, pistachios
