ABOUT Quinoa And Sweet Potatoes RECIPE

The two superfood in one dish. Delicious, healthy and slightly spicy quinoa and sweet potatoes. Easy to prepare, nutritious and scrumptious dish.

Ingredients Serving: 2

  1. 1 cup Quinoa
  2. 2 Sweet potato peeled and cubed
  3. 1 onion finely sliced
  4. 3 garlic cloves chopped
  5. 1 green chilly chopped
  6. 1 tsp Red Chilly powder
  7. ½ tsp Roasted cumin powder
  8. ½ tsp Roasted coriander powder
  9. Cracked peppercorns for seasoning
  10. Salt for seasoning
  11. Few chopped Red and yellow bell peppers for garnish
  12. ¼ chopped coriander leaves
  13. 1 tbsp Lemon juice
  14. 2 cups Water or as required
  15. 2 tbsps Oil

Instructions

  1. Wash the quinoa couple of times in water. Add them in a pot and on medium heat cook stirring continuously till the water is absorbed.
  2. Now add 1½ cup water and cook till the quinoa is cooked and water is evaporated completely. It might take approximately 15-20 mins. Keep aside.
  3. In a pan heat oil. Add onion and garlic and saute for about 2 mins till it turns soft.
  4. Add red chilly powder, cumin and coriander powder, salt to taste and saute for a min.
  5. Add ½ cup water, sweet potatoes and cook till the sweet potatoes is cook for about 7-8 mins.
  6. Add the cooked quinoa into the sweet potato mixture, chopped coriander leaves, lemon juice and season with cracked peppercorns, mix well.
  7. Garnish with chopped bell peppers and few chopped coriander leaves and serve
