Ingredients Serving: 4

  1. Over ripe Bananas- 4
  2. Whole wheat Flour- 1.5 cups
  3. Rolled oats - 1/4 cup
  4. Coconut oil - 1/4 cup
  5. Curd - 1/4 cup
  6. Milk - 4 tbsp
  7. Egg - 1
  8. Baking soda - 1 tsp
  9. Cinnamon powder - 1/4 tsp
  10. Cane sugar - 3/4 cup
  11. Dates - 5
  12. Salt - 1/4 tsp

Instructions

  1. Preheat oven to 170°C. Mash the bananas in a bowl. To it add the egg, curd, milk and oil. Mix until combined.
  2. Sieve all the dry ingredients together and add it to the wet mixture. Add chopped dates to it and combine well.
  3. Spoon out the mixture into individual muffin cups. Sprinkle some oats on top.
  4. Bake at 170 degrees for 15 mins or until top turns golden brown and toothpick inserted comes out clean.
  5. I had some extra dough left so I poured it into a pie mould and baked them together.
