ABOUT Quick Omelette fried rice. RECIPE

I had some leftover rice, so thought of making something tasty out of it. And here is the best use of that rice.

Ingredients Serving: 2

  1. Rice cooked 2 bowl.
  2. Eggs 4.
  3. Onions chopped 2
  4. Cauliflower chopped in small bits 1/2 bowl.
  5. French beans chopped in small bits 1/2 bowl.
  6. Garlic cloves crushed 6 to 8
  7. Ginger paste 2 tsp
  8. Pepper powder 1 tsp
  9. Chilli vinegar 1 tbsp
  10. Soya sauce 1/2 tsp ( optional)
  11. Green Chilli sauce 1/2 tsp
  12. Garam masala 1 tsp
  13. Chilli Powder 1/2 tsp
  14. Salt to taste.
  15. Olive oil / rice bran oil 2 tbsp
  16. Coriander leaves chopped 2 tbsp
  17. Mint leaves chopped 6 to 8 no.
  18. Butter 1 tbsp
  19. Cheese grated 1 cube ( optional)

Instructions

  1. Heat oil in a pan. Add chopped onions, saute for 1/2 minute.
  2. Add Cauliflower and French beans.
  3. Saute and add crushed garlic and 1 tsp ginger.
  4. Add garam masala, pepper powder.
  5. Sprinkle some water on rice and mix with hands to soften it. Adjust salt.
  6. Till that we will make Omelette.
  7. Beat 2 whole eggs and two egg whites.
  8. Add salt, chilli powder and 1 tsp ginger paste. Add chopped coriander leaves. Add chopped pudina leaves.
  9. Heat olive oil in a non-stick griddle and make an Omelette.
  10. Let it cool. Make small bit sized pieces.
  11. Now add soya sauce ( if adding) to the Sauted mixture Add chilli sauce ..
  12. Add rice and mix well. Add Omelette pieces.
  13. Add butter from sides. Saute , cover for 3 minutes.
  14. Garnish with coriander leaves and serve. You can spread some roasted chilli garlic oil while serving.
  15. You can serve with tomato soup too.
