ABOUT Spicy Egg Curry RECIPE

When you don't have any veggies in fridge and you don't understasnd what to cook .. my always hit option is yummy healthy egg curry .. it goes veru well with roti, chapati, paratha, naan or even with rice. A quick yummy solution .

Ingredients Serving: 4

  1. Eggs 8 to 10
  2. Chopped Onion 2
  3. Chopped Tomato 4
  4. Garlic cloves 8 to 10
  5. Ginger 2 " pieces
  6. Green chilly 2
  7. Bay leaf 1
  8. Black pepper corns 8 to 10
  9. Garam masala 1 teaspoon
  10. Cloves 5 to 8
  11. Salt to taste
  12. Oil 2 tablespoon
  13. Turmeric powder 1/2 teaspoon
  14. Red chilly powder 1 to 2 teaspoon
  15. Coriander powder 1 teaspoon

Instructions

  1. First of all boil eggs in sufficient water for 5 to 8 minutes
  2. Let them cool for some time and then peel all eggs and keep aside .
  3. Take chopped onion, tomato, ginger , garlic , green chilly , cloves and black pepper corns in mixie and prepare a fine paste
  4. Heat oil in a pan and add turmeric powder , red chilly powder and coriander powder , sauté for a while and add ready paste
  5. Sauté paste till it starts leaving oil on corners
  6. Add 3 to 4 cups of water and salt to taste .. allow this mixture to boil properly , till oily layer starts appearing on top
  7. Now add boiled and peeled eggs to boiling gravy and give it a boil again .. keep covered for some time
  8. Garnish as you like and serve hot immediately with Naan, paratha or steamed rice .. and enjoy endlessly
