Healthy breakfast - Dosa made with egg, potato, green peas and spices
Rinse Idly rice,urad dal, poha, fenugreek and soak for 2 hours
Grind rice, urad dal,fenugreek, poha with required water to make a smooth batter for 20 - 30 mins.
Cover and ferment for 8 hours or more if required.
After the fermentation, the batter will become double in size and rise.
Add Salt and required water to the batter and mix well.
Heat oil in a pan, add mustard seeds, cummin seed, curry leaves, green peas and saute for 1 mins
Add finely chopped onion, salt turmeric powder and salt for 1 min
Add mashed potatoes, required water and cook for 1 min
Add coriander leaves. Now the stuffing is ready
Pour batter in dosa tawa circular manner to get the circle shape of dosa
Pour the egg above the dosa and cook for 1 min
Add little oil on top of the dosa, flip it and cook for 10 seconds
Place spicy potato mixture in the centre of dosa and serve hot
