ABOUT Papad Nachos RECIPE

Who doesn't like nachos. This recipe is easy and fun to make. It has its own Punjabi twist to it. Great for anytime snacking & starters.

Ingredients Serving: 10

  1. 4 Lizzat papad (any flavour, preferably Punjabi tadka)
  2. 2 tablespoons Red kidney beans (boiled)
  3. 1 Onion (finely chopped)
  4. 1 tablespoon Ginger-garlic mince
  5. 1 Tomato (finely chopped)
  6. 1 tablespoon Coriander (finely chopped)
  7. 1 tablespoon Spring onion (finely chopped)
  8. 1 teaspoon Red chili powder
  9. 1 large red Mexican pepper (finely chopped)
  10. 1 tablespoon Sesame oil
  11. Salt to taste
  12. 1 tablespoon Lime juice for topping
  13. 1/2 cup of chopped Jalapenos, chopped Onions and Tomato for garnishing (optional)
  14. Dollop of mint mayo for serving

Instructions

  1. Arrange papads on a plate and microwave for a minute or half until done.
  2. Cut them in triangular pieces with a pizza cutter while still hot. Keep aside.
  3. In a large mixing bowl throw in the kidney beans, coriander, spring onion and red Mexican pepper. Mix well.
  4. Heat oil in a frying pan add onions and saute until golden brown.
  5. Now add in the ginger-garlic mince, red chili powder, tomatoes and salt. Mix together and cook on low flame until tomatoes are completely done.
  6. Once sauce-like consistency is formed turn off the heat and let the mixture cool down to room temperature.
  7. Now add this to the kidney beans mixture and stir well until everything is combined. Your Salsa sauce is ready!
  8. For plating put generous spoonfuls of salsa sauce in the middle and arrange papad triangles on the sides. garnish with jalapenos, onions, tomatoes, spring onions and little lemon juice.
  9. Serve immediately with a dollop of mint mayo.
