ABOUT Healthy Broccoli, Spinach, potato Patra.( Colocasia leaves) RECIPE

Instead of routine Besan( gram flour) , i have stuffed Patra with Broccoli, Spinach,, Potatoes and Rice flour.

Ingredients Serving: 3

  1. Broccoli washed and grated 1 cup.
  2. Spinach washed and chopped 1 cup.
  3. Potatoes 2 ( medium)
  4. Rice flour 1 cup.
  5. Soya flour 1/2 cup.
  6. Besan 3 tbsp.
  7. Garlic crushed 6 to 8 cloves
  8. Ginger grated 1 tbsp
  9. Ajwain 1/2 tsp
  10. Chilli powder 1 tsp ( to taste).
  11. coriander powder 1 tbsp
  12. Sesame seeds 2 tbsp
  13. Curd 2 tbsp
  14. Coriander leaves chopped 2 tbsp
  15. Salt to taste
  16. Turmeric powder 1 tsp.
  17. Oil 4 tbsp
  18. Patra ( colocasia leaves) 250 grms. ( 15 no. mix big and small size)
  19. Asafoetida a pinch
  20. Mustard Seeds 1 Tsp.

Instructions

  1. Pressure cook Potatoes , cool and grate.
  2. Blend Spinach with little water.
  3. Saute Broccoli in half tsp oil.
  4. Wash, clean and dry colocasia leaves
  5. Take flours in a big plate / bowl.
  6. Add Broccoli, Potatoes. Add Garlic, Ginger, and all masala mentioned above.
  7. Add curd. Add 2 tbsp oil . Now add spinach puree to make a thick batter ( more like a loose dough of flours)
  8. Now take a leaf on an inverted thali (plate) and spread mixture on it.
  9. Put another leaf and so on arrange four leaves. Fold from sides and make a roll.
  10. Steam in a steamer by tucking a toothpick in it.
  11. Steam for 10 to 15 minutes.
  12. Let them cool and than chop first vertically and than horizontally.
  13. You can eat steamed one too with green chutney and a cup of tea / coffee.
  14. You can season it in oil by adding Asafoetida, mustard seeds and Sesame seeds.
  15. And enjoy your Healthy Colocasia leaves snacks. Garnish with coriander leaves. Spread some lime juice ( optional).
