Pearl Millet Soup /Baajra ni raab It is a very healthy, different and delicious variant of soup. It is full of flavours and is made throughout the winters for its health benefits. RAAB is a traditional warm soup famous in Rajasthan and Gujarat and is made from pearl millet flour. Its full of energy and strengthens our immune system.

Ingredients Serving: 2

  1. 2 tablespoons Bajra Aata/Pearl Millet flour
  2. 2 cups Chaach/Buttermilk
  3. 1 carrot chopped finely
  4. 1/4th cup green peas
  5. 1/2 teaspoon salt or to taste
  6. 1/4th teaspoon black pepper powder
  7. 1 pinch cinnamon powder
  8. 1 clove/laung
  9. For tempering - it's an essential part
  10. 1 teaspoon Ghee
  11. 1 pinch Asafoetida
  12. 2 teaspoon Cumin seeds / Jeera

Instructions

  1. Mix bajra flour with 2 tablespoons of water and make a slurry.
  2. Take chaach in a pan and add the bajra flour slurry to it.
  3. Now boil it on high flame stirring continuously.
  4. Once boiled, lower the flame and add all the vegetables and clove.
  5. Add salt, pepper and cinnamon powder and stir again.
  6. Let it simmer for about 5-7 minutes or till the veggies are little soft /tender
  7. Do not over cook, the veggies should be little crunchy.
  8. Meanwhile prepare the tadka.
  9. Heat ghee in tadka pan.
  10. Add hing and jeera.
  11. Once they splutter, switch off the gas and pour this tempering over the Raab.
  12. Garnish with coriander and serve hot.
