Ingredients Serving: 6

  1. For stuffing. -
  2. Yellow moong dal. 1-1/2 cup
  3. Gram flour. 1-1/2 cup
  4. Salt. according to taste
  5. Turmeric powder. 1/2 tsp
  6. Fennel seeds crushed. 1tsp
  7. Cumin powder. 1/2 tsp
  8. Coriander powder. 1 tsp
  9. Dry mango or amchur powder. 1 tsp
  10. Garam masala. 1 tsp
  11. A pinch of hing
  12. Sugar. 1 tsp
  13. 5-6 tsp water or as required to grind ( not too much)
  14. For dough-
  15. Maida or all purpose flour. 2-cup
  16. Semolina or sooji. 1-2 cup
  17. Oil. 4 tbsp
  18. A pinch of soda
  19. Warm Water to knead to dough
  20. Oil for deep frying

Instructions

  1. First take the moong dal and soaked in water for 3 hr.
  2. Until moong dal will be soaked, we will prepare dough .
  3. For dough- take maida sooji, some oil,salt and water. Knead all together.
  4. And cover it by little wet cloth.
  5. For stuffing preparation -
  6. After 3 hr grind that soaked moong dal to make like half chrushed mixer.
  7. Roast the gram flour and keep it aside.
  8. Now take a pan with some oil in it, add ginger garlic green chillies paste and all spices in it.
  9. Add the above semigrind dal . Roast it for few minutes.
  10. Now add the gram flour in it.
  11. After cooling down, take the stuffing mixer and prepare small balls of it.
  12. Now roll the dough a little and now stuff that mixer in that and gently press the edges and flattened. properly
  13. After that again roll out that stuffed dough a little bit.
  14. Make all the stuff dough like that.
  15. Now take another pan with oil to deep fry the kachories
  16. Remember that kachori should be fry in cool oil (once oil heat over high flame, now reduced flame to low or sim )
  17. Then press with the spoon to puff up.
  18. Finally serve the kachories with green and red turmerind chutney .
  19. You can also Garnish it with yogurt and fine sev.
  20. Now grind it in mixer
